Blintzes are quite similar to crepes and are super delicious. What’s great about them is that you can play around with the cream filling and add your preferred ingredients.

In this version, we stuff the delicate crepes with cream cheese, juicy caramelized apples, and raisin filling for extra flavors.

Heavenly Blintzes With Cream Cheese Recipe

Ingredients

Blintzes:

  • 5 eggs
  • 5 tbsp. sugar
  • 5 tbsp. oil
  • ½ tsp. salt
  • 1 tbsp. vanilla extract
  • ¼ tsp. baking soda
  • 2 cups milk
  • 1 cup water
  • 2½ cups sifted flour

Filling:

  • 1 lb. quark creamy soft cheese (500 g)
  • 2 tbsp. vanilla instant pudding mix
  • 1½ tbsp. vanilla sugar (20 g)
  • Caramelized apples (see below)
  • Confectioner’s sugar
  • Caramelized apples:
  • 1 tbsp. butter
  • 2 apples (finely diced)
  • ½ cup sugar
  • 1 tbsp. lemon juice
  • 1 tbsp. honey
  • A handful of raisins

Instructions

Blintzes:

  • Add the eggs, sugar, oil, and vanilla extract to a large mixing bowl
  • Whisk the ingredients well
  • Pour in the milk and water
  • Keep mixing until well combined
  • Stir the sifted flour with the baking soda and salt
  • Add the flour to the mixture gradually
  • Mix until you have a smooth batter
  • Run the batter through a thin strainer to get rid of any lumps
  • Heat a Teflon-coated pan and lightly oil it (only for the first time)
  • Pour the batter onto the pan (one ladle at a time)
  • Fry the crepes (blintzes sheets) on both sides until golden
  • Set aside until you make the cream and caramelized apple filling

Caramelized Apples:

  • Heat a frying pan and add butter to it
  • Add in the finely diced apples, sugar, and lemon juice
  • Fry on medium heat until all the liquids evaporate
  • Add the honey and a handful of light raisins
  • Mix everything
  • Remove from flame

Filling:

  • Line a strainer with a paper towel
  • Pour the quark creamy soft cheese over it
  • Allow the cheese to secrete all its liquids for at least 15 minutes
  • Add the vanilla instant pudding mix with the caramelized apples and vanilla sugar
  • Mix well until you have a uniform filling

Assembly:

  • Fill up each blintzes sheet with a suitable amount of filling
  • Fold the sides and roll it up
  • Fry in butter on both sides over high heat until slightly golden (start with seam side down)
  • Powder the blintzes with confectioner’s sugar (you can save some of the caramelized apples to top the blintzes upon serving)
