Ingredients
- 6 eggs
- 1½ cups sugar
- 2¼ tsp. baking powder (10 g)
- 2½ tsp. vanilla sugar (10 g)
- ¾ cup oil
- 1 cup water/orange juice
- 2½ cups flour
- ½ cup cocoa powder
Instructions
- In two bowls, separate the eggs.
- Beat the egg whites and add the sugar gradually. The secret to a perfect texture is to not beat the egg whites too much; beat them just enough that their consistency becomes a little thicker than that of sour cream.
- In a separate bowl, beat the yolks with half a cup of sugar, vanilla extract, oil, and water/orange juice.
- Add the flour and baking powder, and mix well.
- Fold the egg white foam into the yolk bowl and combine thoroughly.
- Oil a cake pan and pour 3/4 of the batter in.
- Add half a cup of cocoa powder to the remaining batter.
- Mix it in using folding motions (optional: add a heaping teaspoon of instant coffee for an extra kick).
- Pour the chocolate batter into the pan, and lightly mix it with the white batter using a knife.
- Bake in a preheated oven at 350°F (180°C) for about 35 to 45 minutes.
Tips
- To achieve a perfect texture for your marble cake, avoid beating the egg whites too much. You want to beat it just enough to reach a consistency a little thicker than that of sour cream.
