Birthday Party Number Cakes With Fruit
Ingredients
Almond short dough:
- 1½ sticks cold butter (diced (180 g))
- 3 oz. ground almonds (80 g)
- 2½ oz. confectioner’s sugar (70 g)
- 9½ oz. flour (270 g)
- 1 tsp. pure vanilla extract
- 1 large egg
Mascarpone, raspberry and white chocolate cream:
- 8 oz. mascarpone cheese (225 g)
- 2 bars white chocolate (200 g)
- 3½ tbsp. raspberry puree (50 g)
- 2 tsp. lemon juice
- 1 cup heavy cream (250 ml)
- 3 tbsp. vanilla instant pudding mix
Mascarpone and white chocolate cream:
- 8 oz. mascarpone cheese (225 g)
- 1½ bars white chocolate (melted (150 g))
- 1 cup heavy cream (250 ml)
- ½ cup milk
- Some pure vanilla extract
- 3 tbsp. vanilla instant pudding mix
For garnishing:
- Fruits of the season
- Various chocolates
- Nappage – for glazing the fruits
Instructions
Almond Short Dough:
- Grab a large mixer bowl, and add ground almonds, flour, diced butter, and confectioner’s sugar. Install the flat beater, and beat the mixture until it’s crumbly.
- In a separate small bowl, mix the eggs with the vanilla extract. Then, pour this mixture into the other one.
- Beat the new mixture until the dough forms. Then, cover the bowl with plastic film and put it in the fridge. Leave it for an hour to rise.
- When the hour passes, grab the dough and roll it between two parchment papers, and make it into a ¼”-thick sheet (½ cm).
- Choose the number you want on the cake, and print it on a large piece of paper. Then, cut the number’s outline.
- Put the cut paper on top of the dough, and use a knife to cut it to the outline. Repeat twice to create two layers. Make sure to do so when the dough is already in the baking pan, or else it’ll deform when you try to move it.
- Put the baking pan in the oven and bake at 350°F (180°C), and leave it for 15 minutes or until it’s slightly golden.
Mascarpone, Raspberry, and White Chocolate Cream:
- Put the white chocolate in a small bowl, then heat it in the microwave in short pulses until it completely melts. Alternatively, you can use a double boiler.
- Grab a mixer bowl, add the mascarpone cheese, and start to whip it to the consistency you desire.
- Add the melted white chocolate to the mixer bowl, along with lemon juice, heavy cream, raspberry puree, and instant pudding mix. Whip the new mixture until it’s firm.
- Put the bowl in the fridge for 30 minutes, then take it out when it’s stable enough to decorate the cake.
Mascarpone and White Chocolate Cream:
- Grab a large mixer bowl, and add the mascarpone cheese, melted white chocolate, and heavy cream. Whip the mixture until it’s thoroughly combined.
- Then, add milk, vanilla extract, and instant pudding mix. Whip again until the mixture is firm enough to decorate the cake.
Assembling the Cake:
- Grab the first layer of baked dough and put it on your working surface. Then, cover it with the mascarpone raspberry cream using a round piping tip.
- Put the second layer on top of this one, making sure not to squeeze, or else the cream will ooze out of the sides.
- Cover the second layer in the white chocolate cream using a similar round tip. Then, decorate the top of the cake with fresh fruits and chocolates to your liking. You can also use edible flowers.
