Simit is a popular Turkish bagel that you can find everywhere on Istanbul’s streets. Everyone has a hard time resisting the freshly baked scent of these goods!
Here’s the best homemade bagel recipe.

Ingredients
Dough:
- 3½ cups flour sifted (500 g)
- 1 tbsp. dry yeast (10 g)
- 2 tbsp. sugar (20 g)
- ¼ cup oil (30 g)
- 2 tsp. salt (12 g)
- 1 cup water (240 ml)
Coating:
- 4 tbsp. date syrup (or 4 tbsp. maple syrup mixed with 4 tbsp. water)
- 2 cups sesame seeds
Instructions
- Prepare all your dough ingredients except water and put them in a large mixer bowl. Using a kneading hook, knead them for 2–3 minutes.
- Add the water gradually, then knead the dough again for 8–10 minutes Or, until the dough is soft.
- Using the dough, form a ball and put it in a bowl. Then, grab a damp towel and cover the bowl with it. Leave the bowl for an hour until the dough rises.
- Grab the dough and put it on your work surface, then knead it gently for a couple of minutes. Then, divide the dough into seven balls, 4 oz each (120g).
- Put the balls on a tray and cover them with a damp towel. Then, let it rest for 15 minutes.
- Grab two small bowls, and put the sesame seeds in one bowl and date syrup in the other.
- Uncover the balls and start rolling each one into a 20”–24” long and ½” thick cylinder. Then, fold the cylinder into two and start twisting it like a screw. When you’re done, form a circle with it and stick its ends together.
- After you’re done with all the balls, dip them in the syrup, making sure to cover the whole bagel. Then, repeat the step with the sesame seeds, letting them cover your bagels from all sides.
- Put your newly dipped bagels on a baking pan lined with parchment paper. Then, push it into the oven at 430°F (220°C).
- Leave the baking pan in the oven for 12–15 minutes. The bagels should now be golden and crispy on the outside. If they’re not, leave them for a couple more minutes.
- Serve and enjoy! It’s better to serve them on the same day, but you can always freeze them and take them out to defrost later.
Tips
- You can use whole spelt flour for this recipe
- If you don’t have a kneading hook, you can use your hands for the task.
