- 4 Eggs (separated)
- ½ cup Sugar
- ½ cup Shredded coconut
- 1 cup finely ground walnuts
- ½ cup breadcrumbs
- 50 g Dark chocolate of choice (finely grated)
- 1 teaspoon Baking powder
- 2½ teaspoons Vanilla sugar (10g Or 1 teaspoon vanilla extract)
- 1 teaspoon Instant coffee
For Syrup:
- 3 teaspoons Sugar
- 1 cup Boiling water
For Coffee Cream:
- 17 oz Heavy whipping cream
- 1 pack Instant vanilla pudding (2.8 oz)
- ½ cup Sugar
- 1 teaspoon Instant coffee
Instructions
- Preheat the oven to 350°F (180°C).
- Beat egg whites alongside sugar and vanilla extract to stiff peaks in a bowl with a whip mixer.
- Add the egg yolks and keep beating for a few seconds. Add baking powder and instant coffee and keep beating for a few more seconds.
- Add chocolate, coconut, walnuts, and breadcrumbs.
- Gently fold all ingredients with a wooden spoon or spatula and pour the mixture into a greased cake pan.
- Bake for 30 minutes or until a toothpick comes out clean.
Preparing the syrup:
- Mix ingredients together until the sugar melts and pour over the cake.
Preparing the coffee cream:
- Whip ingredients to firm peaks in a mixer bowl, with the wire whip attachment. Spread it over the cake with a spatula and sprinkle grated chocolate.
- Cool the cake in the fridge fora few hours and serve.
