Beetroot is a healthy vegetable that has gotten really popular in the last few years, it has been used in drinks and health shakes.
but we are going to stick to the old traditional way, eat it as a salad.
And it’s going to be on your salad’s top 10 list for sure!
With a handful of nuts and a bunch of other vegetables, it’s going to pack quite a nutritional punch, remember the name: Beetroot and Carrot Salad.

Healthy Beetroot and Carrot Salad
Ingredients
Salad:
- 2 beetroots (peeled)
- 1 big kohlrabi
- 3 big carrots (peeled)
- 1 handful of cilantro (chopped)
- 1 handful of parsley (chopped)
- 1 handful of walnuts (chopped)
- 1 handful of sunflower seeds (for serving)
- Toasted sesame seeds (for serving)
Dressing:
- 3 tbsp. olive oil
- 1 lemon (squeezed)
- 1½ tbsp. vinegar
- 1 tsp. salt
- ½ tsp. coarse black pepper
Instructions
- Use the Mandoline Slicer to slice the vegetables into small strips.
- Now combine everything in a bowl
- After then proceed to combine the dressing ingredients and pour them over the salad
- Mix everything and garnish with a bit of sesame and sunflower seeds and serve!
