In the frigid days of winter, we’re always looking for something to cozy up our homes. What better way to do so than getting to work on a sizzling batch of delicious beef and bean soup? Nothing beats the scintillating zesty aromas given off by a pot of this soup on the stove.
Do you know what’s even better? It’s super easy to cook up this flavor-packed meal. From the feathery texture of the white beans that dissolve in your mouth to the scrumptious seasoned beef chunks, this recipe offers your tastebuds a whole palette of culinary experiences. The numerous veggies and tomato sauce that go into it also make it a meal to remember.

Ingredients
- 2 lbs. beef chuck (cut into medium-size chunks (1 kg))
- 3 cups white beans (pre-checked and soaked (see first preparation step below))
- 3 tbsp. oil
- 3 large onions (chopped)
- 4 garlic cloves (halved)
- 2 bay leaves
- ¼ bushel cilantro (chopped (leaves and stalks))
- ½ bushel parsley (chopped (leaves and stalks))
- 2-3 celery stalks (cut thick)
- Coarse or ground black pepper
- Salt (to taste)
- 2 tbsp. sweet paprika
- Soup mix + beef gravy (to taste – optional)
- 1 tsp. turmeric
- 4 heaping tbsp. tomato paste
Instructions
- Inspect the white beans for dust and debris. Leave them out on the counter overnight fully soaked in water. Don’t cover the container and replace the water 3-4 times.
- Preheat some oil in your pressure cooker. Throw in the beef chunks and sear them to the desired color.
- Mix in the spices (not the salt) and let the beef season for 2 minutes on low heat.
- Throw in the garlic, onion, and celery. Stir and let the mixture fry for 5 minutes.
- Add the strained beans, cilantro, and parsley. Continue to fry and stir for an additional 5 minutes.
- Mix in the tomato paste and water. Close the pressure cooker’s lid and let the ingredients boil.
- Keep the pressure cooker on and closed for an extra 45 minutes. Remove the pressure cooker’s lid and give the soup a taste. Adding a halved tomato and two whole carrots will also give the soup an additional dimension of flavor.
