Ingredients
- 2 small bananas (mashed)
- 5 oz. flour (140 g)
- 1 tsp. baking powder
- ½ tsp. vanilla extract
- 1 large egg
- 3½ oz. sugar (100 g)
- 2½ oz. oil (75 g)
- A pinch of salt
- ½ tsp. cinnamon
- 2½ oz. semi-sweet chocolate chips (75 g)
Instructions
- In a large bowl, beat together the egg, sugar, oil, bananas, vanilla extract, and salt.
- Mix until well combined.
- Sift in the flour, baking powder, and cinnamon. Be sure to mix in a folding motion until almost combined.
- Add the chocolate chips and mix until evenly combined in the batter.
- Transfer the batter to a muffin pan lined with paper baking cups.
- Bake for 12 to 20 minutes, or until a toothpick poked at the center of each muffin comes out with moist crumbs on it.
- Allow to completely cool, and serve.
