How do you feel about baking yourself a treat with just a few ingredients in less than an hour? Well, this is what our banana cake with spelt flour recipe promises!

For starters, it doesn’t require anything you don’t already have in your kitchen. You can use a few old bananas, flour, salt, oil, and a couple of extra additions, and you’ve got yourself a tasty cake!

Also, because we’re mainly using natural ingredients, like bananas and shredded coconut, to enhance the taste, you’re getting the best of both worlds: indulgence, nutritional value, and no artificial flavoring!

The best part? This entire recipe can take less than an hour to whip up. So, are you ready to don your chef hat? Let’s start!

Banana Cake With Spelt Flour

Equipment

Large loaf pan
Universal Measuring Cup

Ingredients

  • 3 ripe bananas (mashed with a fork (it’s also possible to use frozen bananas, but better to blend them in a blender together with the oil, sugar and eggs, before adding the dry ingredients))
  • ⅓ cup coconut/grapeseed oil
  • ⅓ cup shredded coconut (can be replaced with sugar-free sweetener)
  • 2 eggs (can be replaced with ½ cup natural applesauce)
  • 1 tsp. vanilla extract / cinnamon
  • 1 tsp. baking soda
  • Some salt
  • 1 cup quick oats
  • ¾ cup whole spelt flour

Extras:

  • ⅓ cup walnuts (roughly crushed)
  • ¼ cup raisins / semisweet chocolate chips

Instructions

  • Mix all the wet ingredients you have in a large bowl until well combined.
  • After that, slowly add the dry ingredients and beat them all together.
  • If you use any of the extra ingredients, make sure to add them before the flour and mix until they’ve blended in completely.
  • Line a large loaf pan with parchment paper.
  • Gently pour the batter into the loaf pan.
  • Move the pan into the oven and back at 350°F (175°C) for about 35-40 minutes.
