Course: Lunch, Main Course
Cuisine: Mediterranean

Ingredients

  • 6 fresh tilapia fillets
  • ½ lemon (squeezed)
  • ⅓ bushel of parsley (chopped)
  • 5 garlic cloves (minced)
  • 6 tablespoons canola oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon coarse black pepper
  • ½ teaspoon turmeric
  • ½ teaspoon Dijon mustard

Instructions

  • Rinse the tilapia fillets and pat them dry using a kitchen paper towel.
  • In a large bowl, combine the ingredients for the marinade and whisk them thoroughly.
  • In the same bowl or in the baking dish you’ll cook the fish in, add the tilapia to the marinade and cover it completely.
  • Allow the fish to marinate for at least 30 minutes at room temperature or an hour in the fridge.
  • Preheat the oven to 350°F (180°C).
  • Place the fish fillets in a single layer in your baking dish and make sure they’re not touching.
  • Cover the whole thing with parchment paper to allow the steam to cook the fish on the inside.
  • Bake for 15 minutes or until almost cooked through and flaky.
  • Remove the parchment and bake for another 5-10 minutes, this should allow the surface of the fish to brown and get all golden and delicious.
  • Make sure not to overcook the fish (leave it in the oven for more than 30 minutes) so the fish doesn’t dry out and become mealy.
