Ingredients
Fish:
- A whole salmon fish (defrosted with skin on)
- 2 tbsp. grainy Dijon mustard
- 1 tbsp. pomegranate concentrate
- Olive oil
- A pinch of salt
- Some coarse black pepper
- 2 tbsp. date syrup
- 1 tbsp. teriyaki sauce
Vegetables (as a side dish):
- Yam (diced roughly)
- Small white and red onions (diced roughly)
- Garlic cloves (diced roughly)
- Carrot (diced roughly)
- Bell pepper (diced roughly)
- Hot green pepper (diced roughly)
- Olive oil
- A pinch of salt
- Some coarse black pepper
- 1 tbsp. oregano
- 1 tbsp. Za’atar seasoning
- 1 tbsp. date syrup
Instructions
Fish:
- Grab the fish and rub it entirely with olive oil.
- In a small bowl, add pomegranate concentrate, mustard, teriyaki sauce, and date syrup. Combine them well, then brush the fish with the mixture.
- Put the fish in a pan and place it in the oven at 400°F (200°C). Leave it for 20 minutes and start working on the vegetables.
Vegetables:
- Grab a medium-sized pan and pour some olive oil into it. Heat the oil, then drop all your diced vegetables in the pan to fry them.
- Add some salt, coarse black pepper, Za’atar, oregano, and date syrup, and stir.
- Let the vegetables fry for 2–3 minutes, then turn the heat off.
- Move the vegetables into a baking pan lined with parchment paper, then push it into the oven at 400°F (200°C).
- Leave the vegetables in the oven for 30–40 minutes, then serve them alongside the fish.
