Traditional Baked Chicken with Potatoes

Ingredients

Step 1

  • Chicken (whichever parts you like, even whole chicken)
  • 3 bay leaves
  • 3 whole allspice berries
  • 1 ½ tablespoons turmeric
  • 1 ½ tablespoons soup mix
  • Potatoes (as many as you like)

Step 2

  • 2 bay leaves
  • 2 whole allspice berries
  • 1 teaspoon turmeric

Step 3

  • ¼ cup olive oil (2 floz/ 60ml)
  • 4 tablespoons teriyaki sauce
  • ½ teaspoon cumin
  • 1 teaspoon turmeric
  • 1 tablespoon paprika
  • A pinch of salt
  • A pinch of coarse black pepper
  • 1 teaspoon dry cilantro
  • 2 garlic cloves (minced)

Instructions

Step 1

  • Rinse your chicken thoroughly. You can rinse the entire chicken or cut it into parts and then rinse them separately.
  • Place your chicken or parts into a pot of water, then add the bay leaves, soup mix, turmeric, and allspice.
  • Boil your chicken for around 20 minutes.
  • Take your chicken out of the boiling water and set it aside.
  • Fill 2–3 cups of the water you just used. Don’t discard the remaining water.

Step 2

  • Peel some whole potatoes, as you can see in the picture. Make sure to keep the strips connected at the bottom by not cutting all the way through.
  • Remember that pot of water, soup mix, turmeric, and bay leaves? Place your peeled potatoes inside and let them boil for around 15 minutes.
  • Once done, remove the potatoes, wash them, and set them aside.

Step 3

  • Bring over your cups of saved water and pour them into a bowl.
  • Gather all the “step 3” ingredients and mix them thoroughly in that water bowl to make a dressing.
  • Cover a baking pan with parchment paper, then place your chicken on it.
  • Cover your chicken with the potatoes. If you had cut the chicken into parts, then place the potatoes in between the pieces for maximum flavor.
  • Get the dressing you just made and spread it all over the chicken.
  • Preheat your oven to 180°F(80°C) and then place your baking pan inside.
  • When the chicken becomes brown, flip it aside for even cooking.
  • Serve!
