Dough:
- 2 lbs. flour (1 kg)
- 2 tbsp. dry yeast
- 1 tsp. salt
- 1 cup sugar
- 1 cup oil
- 2½ tsp. vanilla sugar (10 g)
- 2 eggs (unseparated)
- 2 cups lukewarm water
Glaze:
- 1 cup water
- 1 cup sugar
- Some lemon juice
- 2½ tsp. vanilla sugar (10 g)
Filling:
- Milk chocolate (or butter cubes with blanched almonds)
Cinnaroll:
- Butter
- Sugar
- Cinnamon
Cinnaroll icing:
- 3½ oz. cream cheese (100 g)
- 2 oz. soft butter (60 g)
- 1½ cups confectioner’s sugar
- ½ tsp. vanilla extract
- A pinch of salt
Instructions
Croissants:
- Put all the croissant ingredients in one bowl and start kneading.
- Knead well until the ingredients blend and form a sticky dough.
- Let the dough rise for an hour minimum. Then, knead it again thoroughly and let it rest for another hour.
- Put the dough on your work surface and divide it into four balls.
- Roll out all the balls into flat surfaces, then cut each one into triangles like you’d cut a pizza. You can even use a pizza cutter for the job.
- On each wide side of the triangles, put a dollop of chocolate or butter cubes with almonds. You can also use any other fillings you prefer.
- Roll the triangles into croissant shapes and let them rise for half an hour.
- Put the croissants neatly on a baking pan and bake them in a preheated oven at 350°F (180°C) for 10 minutes. Make sure not to leave them for longer to avoid overbaking them.
Glaze:
- While the croissants are baking, pour all glaze ingredients into one pan and boil them together.
- Using a food brush, brush the croissants with the glaze once they’re out of the oven.
Cinnaroll:
- After preparing the dough, divide it into three parts and roll them out into balls.
- Roll the balls into flat surfaces, and spread butter on them. Then, sprinkle some cinnamon sugar. Make sure the cinnamon sugar sticks to the dough well, because otherwise, it’ll fall out from the sides when you start cutting.
- Roll the dough again into long rolls and freeze them for 10 minutes.
- Remove the rolls from the freezer, then cut each roll into six pieces. Each piece should be about ¾” thick, which equals 2 centimeters.
- Brush a baking pan with some oil, then put the cinnarolls neatly inside. Make sure to leave some space between them because they’ll get bigger in the oven.
- Leave the rolls to rise for an hour, then bake them in a preheated oven at 375°F (190°C) for 20 minutes.
Cinnaroll Icing:
- Put all ingredients in a bowl and mix them thoroughly using a hand beater.
- Pour the icing over the cinnarolls. It’s best to do it while they’re still hot for the best results.
- Top the rolls with candied pecans, then serve and enjoy!
