Avocado Egg Salad
Ingredients
- 1 ripe big avocado (diced (not too soft))
- 2 hard-boiled eggs (diced)
- 1 scallion stalk (cut into rings)
- Red bell pepper (diced small)
- 1 tbsp. cut olives
- A handful of dill (chopped)
- ½ lemon (squeezed)
- Salt and black pepper (to taste)
Instructions
- Place all the salad ingredients in a large bowl.
- Mix them together until everything is well combined.
- Season to taste, mix again, and enjoy!
