Ingredients
- 2-3 garlic cloves (crushed)
- ½ tablespoon olive oil
- 7-8 cups boiling water
- ½ teaspoon salt
- Some black pepper
- Some turmeric
- 1 ½ cups semolina
- ½ bushel of cilantro
Instructions
- Bring over a deep pot, add some olive oil and then fry your crushed garlic.
- Add some boiling water. You can either boil it or add room-temperature water and allow it to boil.
- Sprinkle your salt, pepper, and turmeric.
- Start to gradually add your semolina in a circular motion while stirring the mixture. The circular motion and the stirring are essential to prevent the semolina from clumping your mixture.
- Don’t panic if your mixture still clumps up. When that happens, just dilute it with some hot water.
- Once you’re through with adding semolina, add your cilantro and allow the soup to cook for approximately 15-20 minutes.
Tips
- Protein-rich soup: To add protein enrichment to your soup, mix two eggs with a tablespoon of cold water. Then add the mixture to your soup while stirring it. Let it cook for about 5 minutes.
- Alternative version: Grate two fresh garlic cloves and add a pinch of freshly ground black pepper and a touch of Sichuan pepper. Don’t forget the turmeric. The trick here is to add the semolina when the water is still warm (lukewarm water between 98°-105°F/ 37°-40°C). This will reduce the probability of clumping. Also, add the cilantro at the edges of the soup to enrich its flavor.
- Make it spicy: By adding spicy paprika and Sudanese pepper to the mixture, you’ll spice up your soup to clear up your blocked sinuses in the cold!
