Sweet, scrumptious, and mouth-watering are just a few ways to describe how this cake tastes. Made with ground almonds, you don’t just get a cake that melts in your mouth, but one that’s also super healthy.

The best part is that it’s easy to make and takes only a few minutes of preparation time to get ready.

Is using seltzer necessary?

Yes, I prefer using seltzer because the bubbles in the seltzer help to make the batter turn out fluffy and airy. You can always opt not to use it, but the cake may not be as soft.


Can I replace the instant pudding mix with another product?

Yes, you can. Instant pudding mix can be replaced with cornstarch. You can mix in some confectioners’ sugar and vanilla sugar to give a bit of taste.

Yet, cornstarch only works if there’s heat involved in the preparation process. Heat is necessary because cornstarch isn’t ‘instant’ like the pudding mix. It needs to be processed, which only occurs when the cornstarch is heated.

So, if there’s heat involved, you can use cornstarch as a substitute. If not, you’ll need to stick with the instant pudding mix.


Did you moisten the cake after baking?

No, there’s no need for that.


Does the lemon add or detract from the instant coffee taste?

Lemon zest enhances the richness of the coffee and makes the flavor pop.

Equipment

8” or 9” medium round baking pan (22 cm or 24 cm)

Ingredients

  • 1 cup self-rising flour
  • 4 tbsp. vanilla instant pudding mix
  • ½ cup ground almonds (can be replaced with shredded coconut)
  • ¼ cup oil
  • ¾ cup sugar
  • 1 tsp. instant coffee
  • 1 tsp. lemon zest
  • 3 eggs
  • 1 tsp. vanilla extract
  • 2½ tsp. vanilla sugar
  • 1 cup seltzer

Instructions

  • Start by combining the flour, instant pudding mix, ground almonds, sugar, instant coffee, and lemon zest in a bowl.
  • Then, mix everything by hand.
  • In a separate bowl, stir in the oil, eggs, vanilla extract, vanilla sugar, and seltzer.
  • Next, pour the liquids from the second bowl into the dry ingredients in the first bowl.
  • Bake in a preheated oven at 340°F-350°F (170°C-180°C) for about 30 minutes or when you poke a toothpick into the center of the cake and it comes out dry.
  • Leave to cool for about 5–10 minutes, then slice and serve!

Tips

  • When you’re adding the seltzer, make sure you pour it in gradually and mix as you’re pouring. This will ensure that the cake turns out fluffy and airy
