In fact, we gave the combo a shot a while ago with a guilt-free flourless cake, and the result was divine!
This time around, we’re here to share a recipe for making crispy almond cookies with shredded coconut.

Equipment
Universal Measuring Cup
Ingredients
- 3 egg whites
- 1 cup brown sugar
- A pinch of salt
- ½ cup shredded coconut
- 2 cups sliced blanched almonds
Instructions
- In a large bowl, mix all the dry ingredients (sugar, salt, shredded coconut, and almonds).
- To the same bowl, add the egg whites and mix everything well.
- Preheat your oven to 350°F (180°C).
- Line your cookie baking sheet with parchment paper.
- Shape the batter into small rounds and arrange them neatly on the parchment paper.
- Bake the cookies for around 30 minutes or until they’re all nice and golden.
- Let the batch cool on a rack before serving or transferring it into a storage container.
Tips
- If you want to up your cookie game, flip the cooled cookies over and add a dollop of chocolate spread on the other side. Then, refrigerate the batch for 10 minutes and enjoy!
- To reduce waste, look for recipes that use egg yolks only, like the classic butter cookies, and make two dessert types at once.
