Sometimes classic cookies are simply the best! And this classic shortbread cookies recipe comes straight from the middle east and uses only 4 ingredients. 

The Ghraybeh shortbread is native to the Arabic and Middle Eastern communities. They are usually made during Ramadhan and Eid to serve guests, but you can also enjoy them whenever you like. 

Ghraybe – classic shortbread cookies have a dreamy texture that simply melts in your mouth. And the taste? Everything you want it to be.

Light and perfect traditional cookies with a simple and quick preparation that melt the second they touch your tongue (they’re even Parve!). One bite, and you’ll find yourselves making them on a weekly basis!

WHAT YOU’LL NEED TO MAKE 4-INGREDIENT SHORTBREAD COOKIES

  • Measuring cup
  • English cake pans

Ingredients

  • Margarine – Ensure that it is at room temperature such that it is soft to touch and holds its shape. This prevents the cookies from flattening
  • Oil – Makes the cookies soft and moist
  • Powdered sugar – You can substitute it with confectioners’ sugar. Both have a light consistency, which mixes seamlessly with butter. Do not use granulated sugar as it is coarse, while brown sugar may cause the cookies to brown too much. Homemade powdered sugar may not work well for this recipe
  • All-purpose flour – It is the base of this recipe. Do not substitute with other types of flour such as cake flour, self-rising flour, or cake flour, as they may compromise the overall texture of the cake. Self-rising flour will make the cookies too crumbly, while gluten-free flour will make the cookies too soft.

Can you replace margarine with butter?

Equipment

1 8 oz / 237 ml measuring cup
1 Electric mixer

Ingredients

  • 1 pack Margarine (Or butter)
  • 1 Cup Oil
  • ½ Cup Sugar
  • 5 cups All-purpose flour

Instructions

  • Preheat the oven to 175C/345F.
  • In an electric mixer, beat the sugar and margarine on medium speed until you achieve a creamy mixture. Reduce the mixer speed to low, gradually add the flour and mix until you obtain a compact mixture.
  • Wrap the dough in a plastic bag and let it chill in the fridge for about an hour before proceeding to make the cookie balls. The dough will become harder to touch but easier to mold. Chilling also helps the cookies maintain their shape and not expand too much when baking in the oven. You can leave it in the refrigerator for up to 3 days or frozen for up to 3 months.
  • Make small balls outof the dough and arrange them on a baking pan lined with baking paper. Note that the cookies may spread during the baking process, so make sure to keep a small space between each ball.
  • Bake the cookies for 15-20 minutes. Note that the cookies remain the same color as they do when raw. They may brown slightly at the bottom.
  •  Allow the cookies to cool at room temperature. It enables them to retain their structure and to have a delicate consistency. Do not touch them until they are well-cooled to prevent them from breaking.
