Frequently Asked Questions:
3-Ingredient Cauliflower Fritters

Can I use fresh cauliflower for this recipe?

Yes, it’s possible to use fresh cauliflower. Just split the florets and boil them till they soften a bit.

Do you boil the cauliflower to kill insects?

. No, you’ll boil the cauliflower for 7 minutes (or whatever the packaging calls for) to get the texture and cooking degree right. It’s not necessarily for insects.

Course: Appetizer, Breakfast, Lunch
Cuisine: Mediterranean

Ingredients

  • 1 bag frozen cauliflower florets (800g)
  • 2 cups of breadcrumbs (you’ll start with one only, and we’ll get to the reason in a minute!)
  • 4 eggs
  • 1 teaspoon salt
  • Black pepper (to taste)
  • Some turmeric (for color)

Instructions

  • Cook the cauliflower according to the instructions on the packaging.
  • Strain the florets and allow them to cool a bit.
  • Pulse-grind the florets in a food processor or just chop them finely.
  • Add the remaining ingredients, but pour the breadcrumbs gradually.
  • Mix until the batter is homogeneous, and make sure to blend each time you add breadcrumbs to stabilize the texture.
  • Cover the batter with plastic wrap and refrigerate for 30 minutes.
  • Heat some oil in a shallow pan.
  • Take the batter out, dampen your hands, and form slightly flat fritters.
  • Fry each side until it’s golden.
  • Scoop the fritters out and place them on a paper towel to drain.

Tips

Some people would rather keep the recipe simple by sticking to the three key ingredients.
However, you can always upgrade the flavor profile to your liking.
Here are a few options to consider:

  • Soup mix
  • Sweet paprika
  • Cumin
  • Onion (finely chopped, grated, or even fried)
  • Grated carrot
  • Minced garlic
  • Shredded cheese
  • Chopped parsley

Consider Oven-Baking

To cut your calorie intake and avoid extra saturated fat, you can bake the fritters.
Just preheat the oven and place the florets on lightly oiled parchment paper. You’ll know that they’re done baking when they turn golden.

Don’t Shy Away From Cold Serving

These cauliflower fritters are just as tasty when served cold. So, you won’t have to throw any leftovers or bother with reheating steps!
