Ingredients

Dough:

  • 2 cups flour (8¾ oz/ 250 gr)
  • 1 heaping teaspoon of baking powder
  • 1 teaspoon salt
  • ½ cup oil (4 floz/ 120 ml)
  • ½ cup boiling water (4 floz/ 120 ml)

Filling:

  • 1 onion (chopped)
  • 1 lb ground meat (½ kg)
  • 1 tablespoon tomato paste (15 gr)
  • 1 teaspoon Baharat
  • ½ teaspoon black pepper (1 gr)
  • 1 tablespoon sweet paprika (5.5 gr)
  • 1 teaspoon salt (2 gr)
  • ½ teaspoon chili flakes (1 gr)

Coating:

  • 1 egg
  • ½ teaspoon salt (1 gr)
  • Sesame

Instructions

Dough:

  • Mix the flour, baking powder, and salt in a bowl.
  • Fill up a cup with oil until it’s halfway and then fill the rest of the cup with boiling water.
  • Add the liquids to the flour mixture.
  • Use a wooden spoon (because it’s hot) to mix the wet and dry ingredients then start kneading until you end up with a soft and even dough.
  • Divide the dough into 2 halves and roll them out on a well-floured surface
  • Cut the dough into circles.

Stuffing:

  • In an oiled pan, fry the onion then add the ground meat.
  • Mix and stir until the meat becomes slightly dark in color.
  • Add the tomato sauce and spices then mix well.
  • Cook until the liquid is gone then let it cool.
  • Take a spoonful of the stuffing and place it on the dough rounds and then close each circle into a half-moon shape.

Coating:

  • Beat the egg and salt.
  • Brush the bourekas and sprinkle some sesame seeds on top.
  • Bake at 375°F (190°C) until the edges are golden.
