Ingredients
Dough:
- 2 cups flour (8¾ oz/ 250 gr)
- 1 heaping teaspoon of baking powder
- 1 teaspoon salt
- ½ cup oil (4 floz/ 120 ml)
- ½ cup boiling water (4 floz/ 120 ml)
Filling:
- 1 onion (chopped)
- 1 lb ground meat (½ kg)
- 1 tablespoon tomato paste (15 gr)
- 1 teaspoon Baharat
- ½ teaspoon black pepper (1 gr)
- 1 tablespoon sweet paprika (5.5 gr)
- 1 teaspoon salt (2 gr)
- ½ teaspoon chili flakes (1 gr)
Coating:
- 1 egg
- ½ teaspoon salt (1 gr)
- Sesame
Instructions
Dough:
- Mix the flour, baking powder, and salt in a bowl.
- Fill up a cup with oil until it’s halfway and then fill the rest of the cup with boiling water.
- Add the liquids to the flour mixture.
- Use a wooden spoon (because it’s hot) to mix the wet and dry ingredients then start kneading until you end up with a soft and even dough.
- Divide the dough into 2 halves and roll them out on a well-floured surface
- Cut the dough into circles.
Stuffing:
- In an oiled pan, fry the onion then add the ground meat.
- Mix and stir until the meat becomes slightly dark in color.
- Add the tomato sauce and spices then mix well.
- Cook until the liquid is gone then let it cool.
- Take a spoonful of the stuffing and place it on the dough rounds and then close each circle into a half-moon shape.
Coating:
- Beat the egg and salt.
- Brush the bourekas and sprinkle some sesame seeds on top.
- Bake at 375°F (190°C) until the edges are golden.
